I also always wanted to play around with the creatures having different relationships to romance and partners for this au, so here's some quick notes!
Avians: Commonly polyamorous due to their free and migratory natures. Their partners don't always know of each other and it's not rare for them to have multiple mates and families in different flocks. They can go months, even years, without seeing their mates as they travel, but the spark of their love always remains and reignites when they're reunited.
Demons: Have packs of romantic and intimate mates, they form lifelong emotional bonds with their partners and are fiercely loyal. If someone in the pack gets interested in a new potential partner it becomes a team effort to court and bring in the new mate.
Centaurs: Live their whole life with a partner picked out for them in early childhood. This partner can stay platonic or become romantic as they grow older, so it’s not rare for them to have 1-3 romantic partners as they always come in pairs of two
