The vanilla and pineapple flavors in these popsicles make them taste great. With a hint of vanilla, the sweet and sour taste of fresh pineapple goes well with the creamy coconut milk. Great for staying cool on a hot summer day!
Ingredients: 2 cups pineapple chunks. 1 cup coconut milk. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract.
Instructions: In a blender, combine pineapple chunks, coconut milk, honey or maple syrup, and vanilla extract. Blend until smooth. Pour the mixture into popsicle molds. Insert popsicle sticks into each mold. Freeze for at least 4 hours or until completely solid. Once frozen, remove popsicles from molds by running warm water over the outside of the molds for a few seconds. Enjoy your refreshing vanilla pineapple popsicles!
