Potato and sour cherry muffins based on the potato and raisin muffins from Gemma Reece’s Muffin book. The base has cooked potatoes. As the dough would be too heavy the eggs are separated and the egg whites are bitten to hard peaks before folding in. I used dried sour cherries instead of raisins. Next time I will probably try with dried prunes and cinnamon in the dough to have a similar taste to the traditional Hungarian prune balls (half prune with cinnamon and sugar wrapped in potato dough to form a big ball, and after cooking covered with sweet crumbs).
