Ingredients: 1 sheet of puff pastry. 1 cup cooked chicken, diced. 2 potatoes, thinly sliced. 100g Brie cheese, sliced. 1 tablespoon fresh thyme leaves. 1 onion, thinly sliced. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. 2 tablespoons brown sugar. Salt and pepper to taste.
Instructions: Warm the oven up to 400F 200C. Put a sheet of puff pastry on a baking sheet that has been lined with parchment paper. Use a fork to make holes in the dough, leaving a border around the edges. Spread out the cooked chicken, sliced potatoes, Brie cheese, and fresh thyme leaves on top of the pastry in an even layer. After the oven is hot, bake the pastry for 20 to 25 minutes, or until it is golden brown and crisp. Make the onion jam while the tart is baking. Set a pan on medium heat and add the olive oil. It will take about 10 minutes of cooking after adding the thinly sliced onions until they are soft and caramelized. Add the brown sugar, salt, and pepper, and mix them in. Keep cooking for five more minutes or until the mixture gets thicker. Take the tart out of the oven and let it cool down a bit. Put the caramelized onion jam on top of the warm tart before serving.
