Ingredients: 250g penne pasta. 2 medium potatoes, diced. 1 cup frozen peas. 1/2 cup basil pesto. 1/4 cup grated Parmesan cheese. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Boil penne pasta according to package instructions until al dente. In a separate pot, boil diced potatoes until tender, about 10 minutes. Add frozen peas to the pot with potatoes for the last 2 minutes of cooking. Drain pasta and return to the pot. Stir in basil pesto and olive oil until pasta is evenly coated. Fold in cooked potatoes and peas. Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
