The flavors of these roasted pizza potatoes are a great change from regular pizza. To make a tasty side dish or snack, you roast potatoes until they turn golden brown and then add marinara sauce, melted cheese, and fragrant basil leaves on top.
Ingredients: 4 large russet potatoes, scrubbed clean and diced into 1-inch cubes. 3 tablespoons olive oil. 1 teaspoon garlic powder. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper, to taste. 1 cup marinara sauce. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. Fresh basil leaves, for garnish.
Instructions: Preheat oven to 425F 220C. In a large bowl, toss diced potatoes with olive oil, garlic powder, dried oregano, dried basil, salt, and pepper until evenly coated. Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until potatoes are tender and golden brown, flipping halfway through. Once the potatoes are roasted, remove them from the oven and spoon marinara sauce over the top. Sprinkle shredded mozzarella and grated Parmesan cheese over the sauce. Return the baking sheet to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly. Garnish with fresh basil leaves before serving.
