You don’t need to be better than any one else ; you just need to always be a better version of yourself. 💫 It’s the start of a new week, the sun is burning our skins and drying up town, and we’re running a mad race between the one thousand and one things on the to-do lists - as many false excuses to skip a meal or have a quick bite of just anything. The remedy ? I’ve found it when I suggested my recipe for this rye bread avocado, watercress, @jayandjoymarket vegan herbs cheese, and lemon & fig-marinated @lesojami lacto-fermented tofu sandwich to @programme_powerdiet . 🥪🌱⭐️⠀ ⠀ • Tu n’as pas besoin d’être meilleure que les autres ; tu as juste besoin de toujours être une meilleure version de toi-même. 💫 C’est le début d’une nouvelle semaine, le soleil brûle nos peaux et assèche la ville, et on coure une course effrénée entre les mille et une choses listées “à faire” - autant de fausses excuses pour sauter un repas ou manger rapidement et n’importe quoi. Le remède ? Je l’ai trouvé en proposant ce sandwich de seigle, avocat, cresson, fromage végétal aux herbes #JayAndJoy, et tofu lacto-fermenté #Sojami dans une marinade de figue citronnée à #Powerdiet. 🥪🌱⭐️⠀ ⠀ #HowTo 👩🏻🍳 #MariesKitchenCrew ⠀ - In a small bowl, prepare the marinade for the tofu : mix the juice of half a lemon, 1 tsp fig pulp vinegar, some pink Himalayan salt, black pepper, wild garlic, fresh chives and shallot. Thinly slice 50g lacto-fermented tofu and toss well into the marinade. Set aside.⠀ - In the meantime, slice 1/2 avocado and cut some raw veggies (cucumber and black radish here) into little pieces in the shape of your choosing. ⠀ - Prepare two slices of rye bread (about 90g). You may have them slightly toasted if you wish. ⠀ - Spread the first slice with some vegan herbs cheese (#JOYPrairie), and place the marinated tofu slices alternatively with the avocado slices on top. Sprinkle some crushed walnuts on top (optional).⠀ - Spread the second slice with some tahini and add a few leaves of watercress (or else) on top, as well as a sliced fresh fig (optional).⠀ - Close the sandwich.
