These Prawn Cocktail Stuffed Avocados are a delightful twist on the classic prawn cocktail. Creamy guacamole-filled avocados are stuffed with a zesty prawn cocktail mixture, creating a refreshing and flavorful appetizer.
Ingredients: 2 ripe avocados. 1 cup cooked prawns, peeled and deveined. 1/4 cup mayonnaise. 1/4 cup ketchup. 1 tablespoon lemon juice. 1/2 teaspoon Worcestershire sauce. 1/2 teaspoon hot sauce optional. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup diced cucumber. 1/4 cup diced red onion. 1 tablespoon fresh parsley, chopped. Lettuce leaves, for serving. Lemon wedges, for garnish.
Instructions: Take the pits out of the avocados and cut them in half. Take some of the meat out of the middle to make room for the prawn cocktail. Mix the cooked prawns with the lemon juice, Worcestershire sauce, hot sauce if using, salt, and black pepper in a bowl. Combine well. Add the diced red onion, fresh parsley, and diced cucumber to the prawn cocktail mix. Put the prawn cocktail mixture into the avocados that have been hollowed out. Put lettuce leaves on plates, and then put the stuffed avocados on top of them. Add lemon wedges as a garnish. Serve right away and enjoy!
