Ingredients: 500g ground beef. 1 packet of taco seasoning mix. 1 can 15 oz of black beans, drained and rinsed. 1 cup of corn kernels frozen or canned. 1 cup of diced tomatoes. 1 cup of shredded cheddar cheese. 1 cup of shredded Monterey Jack cheese. 1 bag of tortilla chips. Sour cream optional. Sliced jalapeos optional. Sliced green onions optional. Salsa optional.
Instructions: Set the oven temperature to 175C 350F. Cook the ground beef in a skillet over medium heat until browned. Eliminate extra fat. To the cooked ground beef, add the diced tomatoes, black beans, corn, and taco seasoning mix. Cook, stirring, for a few more minutes, or until thoroughly heated. Arrange half of the tortilla chips, half of the meat mixture, and half of each cheese in a dish that can be baked. With the remaining ingredients, repeat the layering process. Bake for 15 to 20 minutes, or until the cheese is bubbling and melted, in a preheated oven. Serve hot, topped with salsa, sliced green onions, sliced jalapeos, and sour cream, if preferred.
