Also, two Mondays ago we had a professional chef make us this exquisite meal of seared scallops, risotto with tarragon and scallions, and a watercress salad. I finally get why my brother-in-law loves scallops with risotto so much--the sweetness of the scallops does delightfully leach into the rice.
