These Paleo-friendly Avocado Prosciutto Stuffed Mushrooms are a tasty and savory appetizer or side dish. The creamy avocado, tangy lemon, and salty prosciutto all work together to make a tasty bite.
Ingredients: 6 large mushrooms, stems removed and cleaned. 2 ripe avocados. 4 slices of prosciutto. 1/4 cup red onion, finely diced. 2 cloves garlic, minced. 2 tablespoons fresh lemon juice. 2 tablespoons fresh parsley, chopped. Salt and pepper to taste.
Instructions: Start by heating the oven to 350F 175C. Smash the avocados in a bowl. Add the diced red onion, minced garlic, fresh lemon juice, and chopped parsley. Season with salt and pepper to taste. Each slice of prosciutto should be cut in half lengthwise, making 8 strips. Put some of the avocado mixture inside each mushroom cap. Place a strip of prosciutto around each stuffed mushroom and tie it in place. The stuffed mushrooms should be put on a baking sheet that has been lined with parchment paper. Put the pan in a hot oven and bake for 15 to 20 minutes, or until the mushrooms are soft and the prosciutto is crispy. Take them out of the oven and let them cool down a bit before you serve them. If you want, you can add more fresh parsley as a garnish. Enjoy your stuffed mushrooms with avocado and prosciutto!
