Maddie's puffy pancake recipe
We usually double it and make it in a 9x13 pan. It is super easy to throw together and really delish!
Serves 4 Total time: 45 minutes
Ingredients
3 eggs 3/4 cup milk 1 TBSP butter, melted 1 TBSP sugar 1/2 tsp pure vanilla extract 3/4 cup unbleached white flour 1/4 cinnamon 1/4 tsp salt pinch of ground nutmeg (optional)
Preheat the oven to 425 degrees.
Whisk together the eggs, milk, butter, sugar, and vanilla in a large bowl. Sift in the flour, cinnamon, and salt, and the nutmeg if using. Stir just to combine and set aside.
Butter a 10-inch cast-iron skillet or other oven-proof skillet (works fine in a 9-inch cake pan, too). Evenly pour in the batter. Bake 25-30 minutes, until puffed and golden around the outside and firm in the center. Remove from the oven and top with powdered sugar.
Serve with syrup, or topping of choice.
