This Sweet & Sour Pulled Chicken Sandwich is made with softly shred chicken cooked in a tasty sweet and sour sauce and served on toasted buns. It's a tasty take on the usual pulled chicken sandwich!
Ingredients: 4 boneless, skinless chicken breasts. 1 cup pineapple chunks. 1 cup ketchup. 1/4 cup brown sugar. 1/4 cup apple cider vinegar. 1 onion, diced. 1 red bell pepper, diced. 1 tablespoon soy sauce. 1 teaspoon garlic powder. Salt and pepper to taste. 4 hamburger buns. Sliced pickles optional.
Instructions: In a slow cooker, combine chicken breasts, pineapple chunks, ketchup, brown sugar, apple cider vinegar, diced onion, diced red bell pepper, soy sauce, garlic powder, salt, and pepper. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and can be easily shredded with a fork. Once cooked, remove chicken from slow cooker and shred using two forks. Return shredded chicken to the slow cooker and mix well with the sweet and sour sauce. Toast hamburger buns lightly. Assemble sandwiches by placing a generous portion of sweet and sour pulled chicken onto the bottom half of each bun. Top with sliced pickles if desired, then cover with the top half of the bun. Serve hot and enjoy!
