Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup unsalted butter, softened. 2 eggs. 1/2 cup milk. 1 tsp vanilla extract. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 cup peeled and diced apples. 1/2 cup chopped walnuts. 1/2 cup rolled oats. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp ground allspice. 1/4 tsp ground ginger. For Pumpkin Pie Frosting:. 1/2 cup canned pumpkin puree. 1/2 cup cream cheese, softened. 1/4 cup powdered sugar. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp ground allspice. 1/4 tsp ground ginger.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with cupcake liners. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and all the spices cinnamon, nutmeg, cloves, allspice, and ginger. Set aside. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined. Fold in the diced apples, chopped walnuts, rolled oats, and any additional spices if desired. Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and allow them to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
