Light dishes for any time of the day

 Have you ever noticed that food influences your mood as well as your state during the day? Heavy food causes bad digestion, unhealthy appetite and other problems. For this reason, here you can see my list of dishes that are perfect for any time of day.

The first one seems to be the best option for each person: adult / child. As it has a right balance of proteins and carbohydrates. By the way it’s easy to cook and looks so appetizing:

·      Fried Eggs over Polenta

Ingredients:

Polenta cooked according to     package directions

Four eggs

Bertolli Extra     Virgin Olive Oil

Parmigiano Reggiano cheese,     optional

Directions:

1.    Place a skillet over medium heat and pour in three Tbsp. Bertolli Olive Oil

2.    Once Bertolli Olive Oil is fully heated (it should seem like it’s “shimmering” in the pan), crack in eggs. Season with salt and pepper

3.    While eggs cook, transfer warm polenta to a serving bowl

4.    Cook eggs until whites are set and yolk is still soft. Place the eggs over the polenta, drizzling with some of the oil

5.    Sprinkle with Parmigiano Reggiano and serve immediately

The next one is not yield the previous recipe. It’s also simple to make and deliciously flavorful:

·      Pot Chicken and Saffron Rice

Ingredients:

4 cups chicken or     vegetable stock

a good-sized pinch of saffron threads

2-3 tablespoons butter

1 medium     onion chopped

2 celery stalks finely     chopped

1 Cup leftover or     cooked chicken cut into bite-sized pieces

2 Cups long grain     rice

A handful of flat leaf     parsley chopped

Salt and Pepper

Directions:

1.    Bring stock to a simmer in a saucepan; add the saffron and leave to infuse.

2.    Melt the butter in a large saucepan over medium heat and sweat the onion and celery until softened but not colored.

3.    Add the rice stir until it's coated with the oil.

4.    Add the stock and bring to a boil. Salt and pepper to taste.

5.    Reduce the heat, stir and leave to cook covered for 15 - 20 minutes until the rice is Al dente and the liquid is absorbed.

6.    Fluff the rice.

7.    Stir in the chicken and parsley and allow it to warm through the heat of the rice.

8.    Serve hot.

The next recipe is for those who appreciate the view of the food they consume. Straightforward to make as well. This recipe drives all to the Middle East. But in order to make it more healthier I used to bake it instead of frying.

·      Falafel Recipe

Ingredients:

·       Flour

·       Cumin

·       Coriander

·       Green onion

·       Baking powder

·       Garlic

·       Salt

·       Parsley

·       Dried chickpeas

·       Water

Directions:

1.    Soak dried chickpeas overnight Blitz with herbs, spices, garlic, flour and a touch of water

2.    Form balls, refrigerate to firm up

3.    Fry until deep golden brown and super crispy

4.    Devour as fast as humanly possible. Falafels are at their absolute peak straight out of the fryer!

Simple recipes to treat yourself in a hot day

Hot weather makes me exhausted and kills my appetite.  What I can eat is really light food that is low in calories and easy to prepare.  

First and my favorite is Grostini. I usually eat it before going at work. So, if you like tomatoes and want to taste something spicy, this recipe is definitely for you.

Roasted Tomato Crostini

Ingredients:

2 pints     cherry tomatoes

7 whole     garlic cloves, crushed

1 tsp. salt

½ tsp. red     pepper flakes

pepper to     taste

¼ cup plus 1     Tbsp. BertolliExtra Virgin Olive Oil

1 tsp. fresh     thyme leaves

1 medium     baguette, sliced

Directions:

1.     Preheat oven to 400°F.

2.     In a medium bowl, combine cherry tomatoes, garlic cloves, salt, red pepper flakes, pepper and olive oil.

3.     Pour on a sheet tray and roast tomatoes for 20 minutes, or until soft.

4.     While tomatoes roast, combine remaining olive oil and fresh thyme in a medium bowl.

5.     Once tomatoes are finished, toss with the olive oil thyme dressing. Spoon tomatoes over baguette slices; serve immediately.

The second one is for the avocado-lover. It’s also so easy to cook but more nutritional.

   Avocado Egg Toast

Ingredients:

toasted     gluten-free bread

avocado

soft boiled     egg

salt/pepper

Directions:

1.     Simply spread mashed avocado onto toasted bread.

2.     Slice your soft boiled egg, laying it on top of the bread.

3.     Season with a pinch of salt and pepper.

The next one is my own foodie heaven. It’s really interesting mix of ingredients and the taste is incredible. Nice idea for brunch.

Smoked Salmon Crostini

Ingredients

1     french baguette

2 tablespoons     extra virgin olive oil

15     ounces ricotta cheese (fina style if possible)

2 tablespoons     chives (finely chopped)

2 tablespoons     parsley (finely chopped)

2     tablespoons dill (finely     chopped)

1/2 lemon     (juiced)

To taste:     salt and pepper

4 ounces of     smoked salmon (wild-caught)

Directions:

1.       Gather the ingredients.

2.        Preheat the oven to 400 F.

3.       Slice the french baguette on an angle into 1/4-inch slices. Place them on a baking sheet. They can lay close together, but don't have them overlap. 

4.       Use a pastry brush to brush the olive oil over each baguette slice. If you don't have a pastry brush you can also drizzle the olive oil over the slices. 

5.       Bake in the oven for 5 to 7 minutes or until lightly browned. Watch them closely to make sure they don't burn. 

6.       Remove the baguette slices from the oven and allow them to cool on a cooling rack.  While they are cooling, whip together the ricotta cheese, chopped herbs, and lemon juice in a medium-sized bowl. Season with salt and pepper to taste. If you are planning on making these crostini ahead of time, then place the ricotta mixture into the refrigerator and place the cooled baguette slices in a plastic bag until you are ready to serve. 

7.       Slice or separate the smoked salmon into baguette slice sized portions. 

8.       Place a tablespoon of the ricotta mixture onto each baguette slice. Top with a slice of smoked salmon and garnish with a small sprig of dill. 

9.       Serve with extra lemon and enjoy immediately!
