Tonight's dinner is cauliflower corn chowder. Cook bacon and then pull out of out and drain on paper towel and put in the fridge for later. Sauté onions, garlic, carrots and celery in bacon fat. Once veg is soft add 2 two large cauliflower heads, broke up (frozen is good too). And some dry thyme, salt and pepper. Also add 2 boxes of chicken stock (or homemade frozen which is what I used.) Cook until cauliflower is very soft. Puree with a hand blender. Mix 3T rice flour and 1c cream (could also use reg flour and milk) and stir in. Boil for a minute until thickened. Add in frozen corn. Serve in bowls topped with green onion, cubes of cheddar cheese and bacon. 😋
Y'all day 5 of quarantine and I am boreddd. Not bored enough to actually do anything productive, but bored. Hope everyone is safe and well. We'll get through this together. (oh btw I had more beans and toast this morning. Put the rest of thr beans in the freezer for other meals.)
