No-bake peanut butter cookies with oats and flaxseeds for added fiber and protein. A quick and easy treat that will satisfy your sweet tooth.
Ingredients: 1 cup peanut butter. 1/2 cup honey. 1/2 cup coconut oil. 2 cups rolled oats. 1/2 cup ground flaxseeds. 1/4 cup cocoa powder. 1 teaspoon vanilla extract. A pinch of salt.
Instructions: In a medium saucepan, melt the peanut butter, honey, and coconut oil over low heat. Stir in the cocoa powder, vanilla extract, and salt until well combined. Remove from heat and fold in the rolled oats and ground flaxseeds. Mix until everything is evenly coated. Using a spoon, drop scoops of the mixture onto a parchment paper-lined baking sheet. Flatten each scoop slightly to form cookie shapes. Place the baking sheet in the refrigerator and let the cookies set for about 30 minutes. Once the cookies are firm, remove from the refrigerator and enjoy!
