A tasty and speedy dish of kidney beans with a hint of smoke and barbecue flavor. Ideal as a substantial stand-alone dish or as a side to grilled meats.
Ingredients: 2 cans 15 oz each kidney beans, drained and rinsed. 1/2 cup barbecue sauce. 1/4 cup ketchup. 2 tablespoons brown sugar. 1 tablespoon Dijon mustard. 1 teaspoon Worcestershire sauce. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. 2 slices cooked and crumbled bacon optional. Chopped green onions for garnish optional.
Instructions: In a medium saucepan, combine kidney beans, barbecue sauce, ketchup, brown sugar, Dijon mustard, Worcestershire sauce, garlic powder, and onion powder. Stir well to combine and bring to a simmer over medium heat. Reduce heat to low, cover, and let it simmer for 15-20 minutes, stirring occasionally. Season with salt and pepper to taste. If using, stir in crumbled bacon. Garnish with chopped green onions if desired. Serve hot and enjoy your quick barbecued beans!
