Ingredients: 2 cups cooked chicken, shredded or cubed. 4 cups chicken broth. 2 cups cauliflower florets. 1 cup celery, chopped. 1 cup carrots, chopped optional, omit for lower carb. 1/2 cup onion, chopped. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper, to taste. Fresh parsley, for garnish optional.
Instructions: Put the cauliflower florets, celery, carrots if using, onion, garlic, thyme, and rosemary in a large pot. Add the chicken broth. Once the mixture starts to boil, lower the heat and let it cook for 10 to 15 minutes, or until the vegetables are soft. Once the chicken is done, add it to the pot and let it cook for another 5 minutes. Add salt and pepper to taste to the soup. If you want, you can serve it hot with fresh parsley on top.
