These zesty ranch slow cooker carnitas are very tender and full of flavor. Putting ranch seasoning, citrus juices, and fragrant spices together makes for a tasty change from regular carnitas.
Ingredients: 3 lbs pork shoulder, trimmed and cut into chunks. 1 packet ranch seasoning mix. 1 cup chicken broth. 1/4 cup lime juice. 1/4 cup orange juice. 1 onion, diced. 3 cloves garlic, minced. 1 jalapeo, diced optional. 1 tsp cumin. Salt and pepper to taste.
Instructions: Put the chicken broth, lime juice, orange juice, onion, garlic, jalapeo, cumin, salt, and pepper in a slow cooker. Add the pork shoulder. Put the lid on top and cook on low for 8 hours or high for 4 hours, until the pork is soft and a fork can easily shred it. Take the pork out of the slow cooker when it's done cooking and shred it with two forks. Put the pork shreds back into the slow cooker and mix them with the juices. You can put the carnitas on salads, tacos, burritos, or anything else you like. Have fun!
