Ingredients: 8 slices of bacon, cooked and crumbled. 1 batch of cornbread, crumbled. 1 cup shredded cheddar cheese. 1/2 cup diced red bell pepper. 1/2 cup diced green bell pepper. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup mayonnaise. 1/4 cup sour cream. 2 tablespoons ranch dressing. Salt and pepper to taste.
Instructions: Diced red bell pepper, diced green bell pepper, diced red onion, chopped fresh cilantro, and crumbled cornbread should all be combined in a big bowl. To make the dressing, combine the ranch dressing, sour cream, and mayonnaise in a separate small bowl. Coat everything evenly by pouring the dressing over the cornbread mixture and tossing. Toss the salad once more gently to incorporate the crumbled bacon. To taste, add more salt and pepper to the salad.
