Cornbread Salad
Crispy bacon, gooey cornbread, and crisp vegetables are all combined in this delicious Bacon and Cheese Cornbread Salad and dressed in a creamy ranch dressing. This side dish is ideal for any kind of gathering, including picnics and barbecues.
Ingredients: 8 slices of bacon, cooked and crumbled. 1 batch of cornbread, crumbled. 1 cup shredded cheddar cheese. 1/2 cup diced red bell pepper. 1/2 cup diced green bell pepper. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup mayonnaise. 1/4 cup sour cream. 2 tablespoons ranch dressing. Salt and pepper to taste.
Instructions: Diced red bell pepper, diced green bell pepper, diced red onion, chopped fresh cilantro, and crumbled cornbread should all be combined in a big bowl. To make the dressing, combine the ranch dressing, sour cream, and mayonnaise in a separate small bowl. Coat everything evenly by pouring the dressing over the cornbread mixture and tossing. Toss the salad once more gently to incorporate the crumbled bacon. To taste, add more salt and pepper to the salad. To allow the flavors to mingle, refrigerate for at least half an hour before serving. Enjoy and serve cold!

Ingredients: 2 cups of crumbled vegan, gluten-free skillet cornbread. 1 cup of cherry tomatoes, halved. 1 cup of cucumber, diced. 1/2 cup of red onion, finely chopped. 1/4 cup of fresh cilantro, chopped. 1/4 cup of fresh basil, chopped. 1/4 cup of olive oil. 2 tablespoons of balsamic vinegar. Salt and pepper to taste. 1 cup of mixed greens optional, for serving.
Instructions: Crumbled skillet cornbread, cherry tomatoes, cucumber, red onion, cilantro, and basil should all be put in a large salad bowl. Put the olive oil, balsamic vinegar, salt, and pepper in a different small bowl and mix them together with a whisk. Pour the dressing over the salad ingredients and toss them around a little to make sure everything is covered. Allow the salad to sit for ten minutes so that the flavors can mix.
