Enjoy this tasty and healthy Grilled Chicken Cabbage Salad with Raspberry Balsamic Dressing. It has the smoky flavor of grilled chicken, the crunch of cabbage, and the sweetness of raspberry balsamic dressing. It has just the right amount of flavors and textures.
Ingredients: 2 boneless chicken breasts. 4 cups shredded cabbage. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/4 cup sliced almonds. 1/4 cup fresh raspberries. 1/4 cup balsamic vinegar. 2 tablespoons olive oil. 1 tablespoon honey. Salt and pepper to taste.
Instructions: Warm the grill up to a medium-high level. Add salt and pepper to the chicken breasts. Cook the chicken on the grill for six to eight minutes on each side, or until it's fully cooked. Take it off the grill and let it rest for a few minutes. Then cut it into thin strips. Blend the fresh raspberries in a small bowl. Add the balsamic vinegar, olive oil, honey, salt, and pepper, and mix well. Put shredded cabbage, cherry tomatoes, red onion, and sliced almonds in a large salad bowl. Place the chicken strips that have been grilled on top of the salad. Spread the raspberry balsamic dressing on top of the salad. Spread the dressing over everything and toss it together until it's well covered. Serve right away and enjoy!
