Ingredients: 1 cup rolled oats. 2 cups plant-based milk such as almond or oat milk. 1 cup fresh raspberries. 2 tablespoons maple syrup or agave syrup. 1/2 teaspoon ground cinnamon. Pinch of salt. Optional toppings: sliced almonds, coconut flakes, additional raspberries.
Instructions: In a saucepan, combine rolled oats, plant-based milk, raspberries, maple syrup, cinnamon, and a pinch of salt. Bring the mixture to a simmer over medium heat, stirring occasionally. Reduce heat to low and continue to cook, stirring frequently, until the porridge thickens to your desired consistency, about 5-7 minutes. Once thickened, remove from heat and let it sit for a minute.
