Ingredients: 1 cup graham cracker crumbs. 2 tbsp melted butter. 2 cups cream cheese, softened. 1 cup powdered sugar. 1 tsp vanilla extract. 1 cup heavy cream. 1 cup fresh raspberries. 1/4 cup raspberry jam. Whipped cream and additional raspberries for garnish.
Instructions: In a bowl, mix graham cracker crumbs with melted butter to create the crust. Divide the mixture among parfait glasses and press it down to form the base. In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, continue beating until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture to create a light and fluffy mousse. In a blender, puree fresh raspberries and raspberry jam until smooth. Strain the mixture to remove seeds. Layer the parfait glasses with the cream cheese mousse, raspberry puree, and fresh raspberries. Repeat the layers until the glasses are filled.
