Do you like buckwheat?🌱 this is green unroasted buckwheat that I’m sprouting right now. Its sprouts can be used to make healthy alternatives to granola, milk or even bread. Containing eight essential amino acids, including high amounts of the often elusive tryptophan, buckwheat is considered a good-quality source of protein. Buckwheat is great to help enhance your mood and mental clarity because of the tryptophan. It is also very high in manganese and quite high in vitamins B and E, provides calcium. When buying, be sure to select the unroasted form. Roasted buckwheat is a traditional East European staple, but it is less nutritious after roasting. Cook like rice, at a 1:3 buckwheat-to-water ratio, for about 20 minutes. Unroasted hulled buckwheat can also be sprouted. Soak for 20min, then let it sit at room temperature, rinsing with water 2-3 times a day.
