Coconut Yellow Curry w/ Bell Pepper+ Ground Mushroom on Brown Rice Pasta
GLUTEN-FREE. VEGAN. SCRUMPTIOUS.
INGREDIENTS:
1 Cup Coconut Milk (Thick)
Drizzle Olive Oil
5 Tsp Curry Powder
2 Tsp Organic Raw Apple Cider Vinegar
3 Tsp Coconut Aminos or Tamari (Gluten-Free Soy Sauce)
1/2 Cup Red Bell Peppers
3/4 Cup Cherry Tomatos
3/4 Cup Ground Mushrooms/ Vegan Ground Protein
3/4 Cup Red Onions
Salt & Pepper to taste Top with Parsley
Organic Brown Rice Pasta
INSTRUCTIONS:
Cook Brown Rice Pasta
Separate sauté onions, bell peppers then tomatoes. Add spices and coconut milk mix with pasta! Top with parsley & pepper and ENJOY! :)

As I prepare to get in shape for my up coming wedding (in 70 days), I started to panic about losing weight and finding good alternatives to food that will teach me longevity in leading a healthy lifestyle. Working 10+ hours each day makes it very difficult for me to plan out my meals and scheduling gym time. With my busy work schedule, I did not have time to research what I should eat and what I shouldn’t be eating; this created a barrier for me. Then, I quickly remember that I had this awesome friend whom I went to college with; he is always very health conscious about what he puts into his body, and his amazing vibe of energy to promote healthy living –My good friend Charles Chen! I contacted Charles to help guide me towards detoxing and eating healthy, because my #1 problem is planning my meals and sticking to it. He told me he has a 7 Day Detox regime that he is working on and would love to share it with me; I was thrilled at the idea of doing a detox that was not only delicious, but very effective. As of today, 14 days later, I’ve lost a total of about 8 pounds, and I have been keeping it off! Every day was a different meal plan, and it kept me full and energized.
Next, my #2 problem: my skin. As I’m in my late 20s, I am starting to get adult acne. My entire life, I’ve never had acne before, so it is very tough for me to deal with it now in my older age. I have tried many types of face products, but nothing was helping. Charles advised that eating healthy will definitely help release bad toxins and eventually I will start to notice a very natural healthy glow and my skin will definitely start to clear. I thought that was a very far pitch (silly me)… But! 6 days into the 7 Day Detox that Charles put me on, I started to notice as each pimple (gross) healed, it did not come back! Slowly and surely, I’m near being pimple-less!
I am so grateful to have a friend like Charles. He really accommodated my hectic schedule. He consulted with me over the phone, and quickly after, he sent me an email recapping everything we talked about and shared with me materials rich with different food alternatives, convenient meal plans that I can prepare over the weekend for the busy work week, and lastly, he even suggested on different foods to help my mother who is currently suffering from cancer. I highly recommend Charles Chen, especially to folks who are always on the go like me.
