Some hard to find or elusive animal locations (they're not *always* there, I just kept trying but they are legit spawn points)

Green Iguana, can be found all day and night, use a Varmint Rifle.

American Badger, found mostly at night, can also spawn during the day, use a Varmint Rifle.

Cougar, found only at night, use a Rifle of your choice, personally used the Bolt Action Rifle.

Panther, found only at night, use a Rifle with Express Amo, or a Poison Arrow to study it better, which you can find here so you don't have to buy it.

Grizzly Bear, found at day or night, recommended rifle would be anything with a long scope, so any sniper rifle as you don't want to get close to it. There's a cabin there as well, loot the lockbox for assorted jewelry, Platinum Pocket watch and a Gold Nugget.
