Recipe #12 - Cherry Pie
Review: I think I have a new second favorite pie (my first favorite will forever be pumpkin). I'm not a huge fan of cherries but, baked together with pie crust? Heavenly.
This recipe was fairly easy but very time consuming. It took at least 3 hours to complete because the dough needs to be chilled several times. It also took me a long time to get the bottom crust just right. Adding the decorative lattice-style top crust, however, was easy and fun.
I was worried about making a pie crust from scratch because my mother told me it is very hard. I see where she's coming from but I'm still really glad I didn't use a store-bought crust. Everything is better when you make it yourself and the crust for this pie was no exception. Buttery, flaky, and so satisfying!
As you can probably guess by the photos, I recommend eating a slice of this pie with whipped cream. I imagine it'd be great a la mode as well but I haven't tried that yet. Perhaps with my next slice.

5 cups pitted cherries (these are out of season so I bought them canned)
2/3 granulated sugar
1/4 cup cornstarch
2 tablespoons lemon juice
1 tsp ground ginger
1/8 tsp fine salt
flour
1 tbs unsalted butter
1 large egg
1 tbsp water
1 tbsp sanding sugar (the red sugar on top)

4 tbsp ice water
