Rooibos caramel espresso, Dulce de Leche, Pecan and Bourbon Cake. Yeah, I took a lot of pics of this cake. 😂 Totally in love with it. It’s my OG cake submission for my @christinatosi cake class. A dulce de leche sponge, drizzled with a rooibos espresso and non-alcoholic bourbon mix, layered with a a cake / cookie crumb with added pecans, bourbon (non-alcoholic) from @lyresspiritco and @callebautchocolate caramel gold chocolate. Frosted with caramel rooibos espresso frosting. I grew up with rooibos. Every South African does. It’s a delicious tea that’s a superfood - it contains no caffeine, no acid and no tanine - unlike many other health teas. And it’s not bitter and tastes sweet. We feed it to our babies, use it when we want to detox, drink it when we are feeling ill, enjoy it with a piece of cake and we even turned it into an espresso by @redespresso . I remember visiting a farm once and seeing rooibos and hint bush teas grow wild around apple orchards. The smell was gorgeous - honey, fruity, rich. Rooibos is a robust, fruity tea so it goes well with caramel. It also cuts through the sweetness. Bourbon has vanilla and caramel notes so that goes too. Then of course dulce de leche is caramel. The pecans add a bit of nutty, buttery flavour. This is one of my fave cakes that I’ve made to date. 😁 Thx to @christinatosi and @learnmonthly for an excellent and mind blowing month.
