Redneck Caviar, or blackeye pea salad, is a simple and light dish made with a variety of colorful and fresh ingredients. Ideal as a cool side dish or for potlucks and picnics.
Ingredients: 2 cans blackeye peas, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup green bell pepper, diced. 1/4 cup red bell pepper, diced. 1/4 cup olive oil. 2 tablespoons red wine vinegar. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Blackeye peas, corn, cherry tomatoes, red onion, cilantro, green bell pepper, and red bell pepper should all be combined in a big bowl. Mix the olive oil, red wine vinegar, Dijon mustard, salt, and pepper in a small bowl. After pouring the dressing over the bean mixture, toss to fully incorporate. To allow the flavors to mingle, refrigerate for a minimum of half an hour. Enjoy and serve cold!
