Ingredients: 1 large head cauliflower, chopped. 4 cups chicken or vegetable broth. 1 medium onion, chopped. 3 cloves garlic, minced. 2 tablespoons ghee or coconut oil. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. Fresh parsley, for garnish.
Instructions: Heat coconut oil or ghee in a big pot over medium heat. Add the minced garlic and onion and saut for about 5 minutes, or until the ingredients are soft. Add the cauliflower, salt, pepper, dried thyme, and dried rosemary. Mix thoroughly. Add the vegetable or chicken broth. Once the cauliflower is tender, simmer it for 20 to 25 minutes on low heat after bringing it to a boil. Smooth and creamy soup can be achieved by blending it with an immersion blender or a standard blender. If necessary, taste and adjust the seasoning. Garnish with fresh parsley and serve hot.
