Ingredients: 1.5 lbs beef stew meat, cubed. 2 tbsp olive oil. 1 onion, chopped. 3 cloves garlic, minced. 3 carrots, sliced. 3 potatoes, cubed. 1 cup red wine. 2 cups beef broth. 1 can 14.5 oz diced tomatoes. 2 tsp dried thyme. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add beef stew meat and cook until browned on all sides. Remove and set aside. In the same pot, add onion and garlic. Cook until softened. Return beef to the pot. Add carrots, potatoes, red wine, beef broth, diced tomatoes, dried thyme, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours or until beef is tender. Serve hot and enjoy!
