Ingredients: 2 medium beets, roasted, peeled, and diced. 1 cup quinoa, rinsed and cooked. 2 ripe avocados, diced. 1/4 cup fresh parsley, chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup red onion, finely chopped. 1/4 cup crumbled feta cheese. 1/4 cup extra-virgin olive oil. 2 tablespoons red wine vinegar. 1 tablespoon Dijon mustard. 1 clove garlic, minced. Salt and pepper, to taste.
Instructions: Diced roasted beets and cooked quinoa should be mixed together in a large bowl. Add the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to a different small bowl. Use a whisk to mix the ingredients together.
