This refreshing mango shrimp salad is bursting with flavors of ripe mangoes, creamy avocado, and juicy shrimp. The tangy lime dressing adds a zesty kick to this colorful and nutritious dish, perfect for a light lunch or dinner.
Ingredients: 1 lb shrimp, peeled and deveined. 2 ripe mangoes, diced. 1 red bell pepper, diced. 1/2 red onion, thinly sliced. 1/4 cup fresh cilantro, chopped. 1 avocado, diced. 1/4 cup lime juice. 2 tbsp olive oil. 1 tbsp honey. Salt and pepper to taste. Mixed salad greens, for serving.
Instructions: Dice the avocado, red bell pepper, red onion, cilantro, and mango and put them all in a large bowl. To make the dressing, mix lime juice, olive oil, honey, salt, and pepper in a different bowl. As soon as the pan is hot, add the shrimp and cook them for two to three minutes on each side, until they are pink and fully cooked. Put the cooked shrimp into the bowl with the mango mix. Pour the dressing over the salad and gently toss it to cover everything. Put the mango shrimp salad on top of a bed of mixed salad greens. If you want, you can add more cilantro as a garnish.
