Also sidenote you almost definitely could use pine needles in your ratatouille. It's been forever since I've had them so I can't make flavor recommendations but people absolutely use pine needles for teas and tinctures in the same fashion they do rosemary (idk about taste tho), so it's definitely an idea. There's probably some recipes online
I’ve tasted some tincture with pine needles/sap and I know about the tea, but only that post & this encouragement of yours is the first time I’ve realised there’s nothing and nobody preventing me from throwing it into actual food in a spice-like manner! Amazing. Eye-opening. Feeling unstoppable. So like thank you for the idea, I’m going to google recipes & forage a bunch of needles the next time I go walking around; unlike rosemary, there’s pines all around & plenty needles to spare. Will let you know if they go well with the ratatouille, hah!
