These dry waffles are packed with the delightful flavors of fresh rhubarb and mixed vegetables. They are paired with a zesty guacamole for a unique and savory twist on the classic waffle breakfast. Perfect for a brunch or any time you're craving a savory waffle treat.
Ingredients: 2 cups all-purpose flour. 2 tablespoons sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 2 large eggs. 1 3/4 cups milk. 1/2 cup vegetable oil. 1 teaspoon vanilla extract. 1 cup diced rhubarb. 1 cup diced mixed vegetables e.g., bell peppers, onions, tomatoes. 2 ripe avocados. 1 lime, juiced. 1/4 cup chopped cilantro. Salt and pepper to taste.
Instructions: Put the flour, sugar, baking powder, and salt in a large bowl and mix them together. Separate the eggs into a different bowl. Add the milk, vegetable oil, and vanilla extract, and mix them together. Add the wet ingredients to the dry ones and mix them together until they are just mixed. A few lumps are fine; don't mix it too much. Mix the diced rhubarb and mixed vegetables into the waffle batter in a gentle way. Warm up your waffle iron and use oil or non-stick spray to lightly coat it. Place the waffle iron that has already been heated with the waffle batter and cook it according to the maker's directions until it is golden brown and crisp. Be sure to make the guacamole while the waffles are cooking. Take some ripe avocados and mash them up in a bowl. Then add the lime juice, chopped cilantro, salt, and pepper. Change the seasonings to your liking. Add guacamole to the waffles that have just been cooked and enjoy!
