This is a tasty recipe that is a copycat of Food Court Bourbon Chicken. It has tender chicken pieces coated in a sauce that tastes like soy, bourbon, and spices. It goes well with steamed rice.
Ingredients: 1 lb chicken thighs, boneless and skinless. 1/4 cup soy sauce. 1/4 cup brown sugar. 2 tablespoons ketchup. 1 tablespoon apple cider vinegar. 1 tablespoon bourbon optional. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 1/4 teaspoon red pepper flakes. 1 tablespoon vegetable oil. 2 green onions, chopped for garnish. Cooked rice, for serving.
Instructions: In a bowl, whisk together soy sauce, brown sugar, ketchup, apple cider vinegar, bourbon if using, garlic, ginger, and red pepper flakes. Cut chicken thighs into bite-sized pieces. Heat vegetable oil in a skillet over medium-high heat. Add chicken to the skillet and cook until browned on all sides. Pour the prepared sauce over the chicken in the skillet. Reduce heat to medium-low and simmer for 10-15 minutes, or until the sauce thickens and chicken is cooked through, stirring occasionally. Once done, remove from heat and let it rest for a few minutes. Serve over cooked rice, garnished with chopped green onions.
