A tasty Fried Chicken Po'boy Sandwich with hot chicken, fresh vegetables, and a kick of spice. Great for a filling dinner!
Ingredients: 4 boneless chicken breasts. 1 cup buttermilk. 1 cup all-purpose flour. 1 cup cornmeal. 1 tsp salt. 1 tsp paprika. 1/2 tsp cayenne pepper. 4 sub rolls. Lettuce leaves. Sliced tomatoes. Sliced pickles. Mayonnaise. Hot sauce. Vegetable oil for frying.
Instructions: Put chicken breasts in a bowl and cover them with buttermilk. Give them 30 minutes to soak. Salt, paprika, cayenne pepper, and flour should all be mixed together in a different bowl. Take the chicken out of the buttermilk and let the extra drip off. Make sure that each chicken breast is well covered with the flour mixture. In a deep fryer or large skillet, heat the vegetable oil to 350F 175C. It should take about 5 to 7 minutes per side to fry the chicken breasts until they are golden brown and fully cooked. Put paper towels down to dry. Cut the sub rolls in half and toast them a little. On the bottom half of each roll, spread mayonnaise. On the top half, spread hot sauce. On the bottom half of each roll, put lettuce leaves, sliced tomatoes, and pickles. On top of the vegetables, put the fried chicken breasts. Put the sandwiches together and serve them hot.
