Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 15 oz diced tomatoes. 1 onion, diced. 2 cloves garlic, minced. 1 tablespoon chili powder. 1 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 2 cups chicken broth. 1/4 cup chopped fresh cilantro optional, for garnish.
Instructions: In a slow cooker, combine diced chicken, black beans, kidney beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, paprika, salt, and pepper. Pour chicken broth over the mixture and stir to combine. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and flavors are well combined. Serve hot, garnished with chopped fresh cilantro if desired.
