Ingredients: 2 large beets, peeled and sliced. 1 cup almond flour. 1/4 cup coconut oil, melted. 1 tablespoon maple syrup. 1/4 teaspoon salt. 1/2 cup Greek yogurt. 1 tablespoon lemon juice. 1 teaspoon lemon zest. 1 clove garlic, minced. 2 tablespoons fresh dill, chopped. Salt and pepper to taste. 1/4 cup crumbled feta cheese optional. 1/4 cup chopped walnuts optional.
Instructions: Turn on the oven and heat it up to 400F 200C. Slice the beets and put them on a baking sheet. Roast them for 20 to 25 minutes, or until they are soft. Take it out of the oven and let it cool down. Put melted coconut oil, maple syrup, salt, and almond flour in a bowl. This is the crust. Press it into the bottom and sides of a tart pan. Lemon juice, lemon zest, garlic, and dill should all be mixed together in a different bowl. Add pepper and salt. Cover the almond crust with the yogurt mixture and spread it out evenly. Put the slices of roasted beets on top of the yogurt mix. If you want, you can top the beets with crumbled feta cheese and chopped walnuts. Before putting the tart in the oven, heat it up. Bake it for 15 to 20 minutes, or until the crust is golden brown. Let the tart cool down a bit before cutting it up and serving it.
