Roasted Carrot Hummus, which highlights the earthy and sweet flavors of roasted carrots, is a delicious take on classic hummus. This colorful and healthful dip is great for parties or as a snack.
Ingredients: 3 large carrots, peeled and cut into chunks. 1 can 15 oz chickpeas, drained and rinsed. 3 cloves garlic, minced. 2 tablespoons tahini. 2 tablespoons olive oil. Juice of 1 lemon. 1/2 teaspoon ground cumin. Salt and pepper to taste. 2 tablespoons water or more, as needed.
Instructions: Preheat your oven to 400F 200C. Place the carrot chunks on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 25-30 minutes or until the carrots are tender and slightly caramelized. In a food processor, combine the roasted carrots, chickpeas, minced garlic, tahini, lemon juice, ground cumin, and a pinch of salt and pepper. Blend the ingredients until smooth, adding water as needed to reach your desired consistency. Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired. Transfer the roasted carrot hummus to a serving bowl, drizzle with a bit of olive oil, and garnish with fresh herbs or a sprinkle of cumin, if you like. Serve with pita bread, crackers, or fresh veggies for dipping.
