French Love Letters Cookies are delicate and buttery heart-shaped treats filled with sweet raspberry jam. These romantic cookies are perfect for sharing with someone special or expressing your love on any occasion.
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup unsalted butter, softened. 1/4 cup powdered sugar. 1/4 teaspoon salt. 1 large egg. 1 teaspoon vanilla extract. 1/4 cup raspberry jam.
Instructions: Melt the butter and mix it with the sugar in a large bowl until the mixture is smooth. Add the egg and vanilla extract and mix them in well. Mix in the flour and salt little by little until a dough forms. Make a disk shape out of each of the two pieces of dough. Put them in the fridge for 30 minutes after wrapping them in plastic wrap. Warm your oven up to 350F 175C and put parchment paper on a baking sheet. Spread out a piece of the chilled dough on a floured surface until it is about 1/8 inch thick. Cut out heart shapes from the rolled dough with a heart-shaped cookie cutter. Then, put the hearts on the baking sheet that has been prepared. Roll out the scraps again gently and cut out more cookies until you've used up all the dough. For 8 to 10 minutes, or until the edges start to turn a light golden color, bake the cookies. For a few minutes, let the cookies cool on the baking sheet. Then, move them to a wire rack to cool completely. Spread raspberry jam on the flat side of half of the heart cookies after they have cooled. To make "love letter" cookie sandwiches, put one heart cookie on top of each jam-covered cookie.
