Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 4 large egg yolks. 1 teaspoon vanilla extract. Pinch of salt. Desired mix-ins chocolate chips, nuts, fruit, etc..
Instructions: Heavy cream, whole milk, and half of the sugar should be mixed together in a medium-sized saucepan. Stir the mixture every once in a while over medium-low heat until it just starts to steam. Do not let it get too hot. In a different bowl, beat the egg yolks and the rest of the sugar with a whisk until the mixture is pale and a little thicker. As you keep whisking, slowly pour about half a cup of the warm cream mixture into the egg yolks. This will temper the eggs. Put the egg mixture that has been tempered back into the saucepan with the rest of the cream mixture. Stir the mixture all the time over low heat for about 5 to 7 minutes, or until it gets a little thicker and coats the back of a spoon. Take the pan off the heat and add the vanilla extract and salt. Through a fine-mesh sieve, pour the mixture into a clean bowl. This will get rid of any bits of cooked egg. To keep a skin from forming, put plastic wrap over the bowl and press it directly onto the mixture's surface. Put it in the fridge for at least four hours or overnight. Once the mixture is cold, use an ice cream maker and follow the directions on the box until it has the consistency of soft serve. Add mix-ins in the last few minutes of churning if you want to. Put the gelato that has been churned into a container that can go in the freezer. Freeze for at least two hours, or until it is firm. Enjoy the gelato that has been scooped into bowls or cones.
