Fresh berries, juicy peaches, grapes, and pomegranate seeds are mixed with a fragrant rosemary and vanilla Rooibos syrup to make this festive fruit salad. It's a great addition to any holiday party or other special event.
Ingredients: 2 cups mixed fresh berries strawberries, blueberries, raspberries. 2 ripe peaches, sliced. 1 cup seedless grapes. 1/2 cup pomegranate seeds. 2 sprigs fresh rosemary. 1 vanilla bean, split and seeds scraped. 1/2 cup water. 1/4 cup honey. 1 tablespoon lemon juice. 1/4 teaspoon salt. Fresh mint leaves for garnish.
Instructions: Put the honey, vanilla bean seeds, water, and fresh rosemary sprigs in a saucepan. Over medium heat, bring the mixture to a simmer. Stir it every now and then for about 5 minutes, or until the honey is completely dissolved. Take the syrup off the heat and let it sit for 15 minutes. Then, strain it into a bowl and throw away the vanilla bean and rosemary bits that are still in it. Let the syrup cool down until it's no longer hot. Put the mixed berries, sliced peaches, grapes, and pomegranate seeds in a large bowl. Pour the rosemary and vanilla Rooibos syrup over the fruit after it has cooled. Add a little salt and lemon juice to the fruit and toss it gently to mix. Put the salad in the fridge for at least 30 minutes to let the flavors mix. Put fresh mint leaves on top before serving.
