Face & Chips
This week I went out of Toronto and expanded my taste buds with a true taste of Newfoundland - cod's head, cod's tongue and cod's cheek! My culinary adventure with friends Arlene Stein (Chair of the Terroir Symposium), Valerie Howes (Food Editor at Reader's Digest) and Bettina Schormann (Pastry Chef and Co-author of Earth to Table), took place at the 3rd annual Roots, Rants and Roars festival in root cellar capital of Canada - Elliston, Newfoundland. A fun-filled weekend of east coast fare wrapped in the music of their culture.
At the "King of Cod" event last Friday night we dined on "Face & Chips" - a dish prepared by Chef Jeremy Charles of Raymonds Restaurant. Jeremy served up the fried cod's head with a side of crab slaw and potato salad all beautifully presented on a branded cedar plank. I loved the cod tongue and cheek but must admit the head itself was a bit of a challenge to eat (I passed on devouring its teeth!).
Other favourites from the festival included Halibut on a bed of bacon jam with kale puree by chef Martin Jeneau of Pastaga (2011 winner of the Gold Medal Plates) and the Capelin fish on pickled veg by chef Todd Perrin of The Chefs Inn.
