My yams decided to sprout this weekend, so I figured I'd do what I usually do whenever I want to get rid of a bunch of starchy tubers or root veggies; cook 'em up all at once! And you know what? Crock-Pots are wonderful for that. If you have one and also happen to have a buncha root veggies hanging around, you might want to give this recipe a try! I was mostly just messing around when I tried this, but it ended up being mighty tasty and my mom (Who eats in a way my brother and I describe as "bird-picking"...) could not stop eating it. I never thought it would be such a hit!
These were all lovely, but I was getting a little tired of looking at them!
Want to give it a go? First, gather your ingredients!
Root Veggie Mash/Puree
You'll need:
-some delicious root veggies! I used about 5 carrots, 4 beets, 2 yams (Not pictured. I used the kind that's white on the inside!), and a taro root (Found this at my Asian market!). You can use another combination; this is just what I had laying around!
-a can of coconut milk (I use Aroy-D because it doesn't have anything funky added to it like guar gum!)
-if you'd like to add some more healthy fat, go for it! I think I added a tablespoon or two of coconut oil.
-salt and pepper to taste, if you'd like.
Instructions:
1. Chop yo' veggies and throw them into the pot.
Now, you can do this as sloppily as you'd like. As you can see, that's exactly what I did!
2. Dump a can of coconut milk over it! Yum.
3. Add anything else you'd like to put in, like oil. Let it sit for about 8 hours on low and peek at and/or stir it every now and then if you can! You don't want it to stick to the sides and burn.
4. When all of the veggies are super-soft and mush-able with a fork, you have succeeded! You may now either eat as is, add salt and pepper, and/or put it in a blended/food processor for a more uniform texture.

Okay, maybe it isn't too pleasing to the eye, but it was pretty darn delicious! It actually tasted somewhat like beans and my mom kept dipping chips into it...Mmm.
