Now onto the true matters! *opens a book labelled theories and madness and skips to an unspecified page* For my first official question, as we all know monsters exist within the Undertale universe some we have seen before (like undead) others we have not. My question first of all is this, do you believe that every type of monster exists from fairies to dragons within the universe and if so why don't we see em?

It’s impossible to say “every type of monster exists” in the game. Monsters of all shapes and sizes exist in many cultures and stories. However, considering Frisk does not get to explore the whole underground, Frisk has not encountered every possible monster. Consider how Frisk never reached New Home, which is described as a crowded capital.
Coincidentally, one of the monsters you mentioned is confirmed to live in New Home – a dragon.
There is another dragon in the game that appears much sooner – RG02.
The possibilities are endless when it comes to what type of monsters exist in the underground since Frisk is unable to meet them all.
