Ingredients: 200g tagliatelle pasta. 1 pinch saffron threads. 100g unsalted butter. 1/2 teaspoon ground turmeric. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground cardamom. 1/4 teaspoon ground cloves. Salt to taste. Freshly ground black pepper to taste. Grated Parmesan cheese for serving. Fresh parsley for garnish.
Instructions: Cook tagliatelle pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water. In a small bowl, soak saffron threads in 2 tablespoons of warm water for 5-10 minutes. In a saucepan over medium heat, melt unsalted butter until it starts to foam. Add ground turmeric, ground cinnamon, ground cardamom, and ground cloves to the melted butter. Cook, stirring constantly, for about 1-2 minutes until fragrant. Pour in the saffron water along with the saffron threads. Season with salt and freshly ground black pepper to taste. Stir well to combine. Add the cooked tagliatelle pasta to the spiced butter sauce. Toss until the pasta is evenly coated, adding a splash of reserved pasta water if needed to loosen the sauce. Serve hot, garnished with grated Parmesan cheese and fresh parsley. Enjoy!
