Sanguisorba minor, known as small Burnet, or aimatoxorto in Greek, growing wild on Chelmos Mountain. The young leaves are edible, and can be eaten raw. Both the root and leaves are astringent. Thus, the herb is indicated for diarrhea and wound healing. Some of my favorite plants: (1) Salad burnet. Has a nutty cucumber flavor. Sanguisorba minor. (2) Jewels of Opar, poor man’s ginseng. An adaptogen. Talinum paniculatum. Can also be eaten as a green.
